2021 HBS: Dismantling Hop Creep: Advancements in Hop Science

Join Tom Shellhammer (Oregon State University) , Adam Beauchamp (Creature Comforts Brewing), Rob Ring (YCH R&D Lab) and Spencer Tielkemeier (YCH Brewing Innovations) as they discuss recent scientific advancements in the study of Hop Creep, or increased attenuation following dry-hopping. The group will offer lab and brewery-based insights on how to better understand and combat the problematic effects of hop creep in a production brewery.

    Adam Beauchamp
    COO

    Adam Beauchamp is the Chief Operating Officer and one of the co-founders of Creature Comforts Brewing Co. in Athens, GA. Beauchamp is a University of Georgia Alumni, and in 2006 he left a Ph.D. program in genetics and molecular biology at Emory University to pursue his passion and dream of opening a craft brewery. He served as a brewer at Sweetwater Brewing Company in Atlanta, GA for seven years before making his dream a reality and opening Creature Comforts alongside the other founders in 2014.

    Robert Ring
    Laboratory Research Technician

    Robert Ring is a laboratory research technician with Yakima Chief Hops. Prior to YCH, he worked in hops and hemp analytical laboratories. He holds a Bachelor of Science in chemistry from Central Washington University, where he worked as an undergraduate research assistant in an environmental chemistry laboratory. Rob is from Yakima, Washington.

    Spencer Tielkemeier
    Director of Sales- North America

    Spencer Tielkemeier is the Director of Sales- North America for Yakima Chief Hops. He spent 9 years in as a production brewer in Austin, TX, specializing in hop-forward and continental lager styles. Since joining YCH Hops, Spencer has been a key part of their Brewing Innovations team, developing new products, honing best-practices for product usage, and providing tailored customer support in challenging product application scenarios. Spencer believes the best beer pairing is made where hops meet disc golf. He lives in Yakima, WA with his wife, daughter, and dog. You can reach him at: [email protected]

    Tom Shellhammer
    Professor of Fermentation Science

    Dr. Shellhammer is the Nor’Wester Professor of Fermentation Science in the Department of Food Science and Technology at Oregon State University. He is an internationally-recognized expert in hops chemistry and brewing science, and his lab investigates hops, beer quality and the origins of hop aroma and flavor in beer. He teaches undergraduate and continuing education courses pertaining to brewing science and beer quality. He has published over 100 peer-reviewed publications, book chapters, technical reports and patents and delivered over 300 professional presentations on 5 different continents. He served as President of the Board of Directors of the American Society of Brewing Chemists, the President of the District NW Master Brewers Association of the Americas, and currently serves on the Board of Examiners for the Institute of Brewing and Distilling. He is also a member of the Brewers Association Quality subcommittee.
